Preparation Instructions:

Place one 23 lb cube of Brill Smooth & Light Icing in a 20 qt mixing bowl.

Soften by mixing on low speed (1st speed) for 3 minutes.

Slowly add 1 lb of cold water (amount may vary) while mixing on low speed.

Scrape down bowl and agitator thoroughly; continue mixing until smooth.

Mix for 5 minutes on medium speed (2nd speed) using a 3-speed mixer.

Mix again on low speed and add additional water if needed.

Continue mixing for 7–10 minutes on low speed until fully blended.

For two cubes (in a 40 qt bowl): Double the water amount and mix on 1st and 3rd speed using a 4-speed mixer.
