Preparation Instructions (Foodservice Format):

Preheat oven to 450°F (or 390°F for convection).

In a 10 qt. bowl, combine 5 lbs mix with:

6 2/3 cups cold milk, or

7 cups buttermilk, or
-
6 cups cold water (for optional prep).

Mix using paddle at low speed for 25–30 seconds or mix by hand until fully incorporated.

Turn dough onto floured surface. Knead lightly. Roll to ½-inch thickness.

Cut biscuits using floured cutter (do not twist).

Place on greased baking pan with sides touching.

Bake for 12–14 minutes (9–10 min convection).

Brush tops with melted butter after baking.
